Non a caso il suo ristorante, l’Imbuto a Lucca, si trova in un luogo non convenzionale (all’interno del L.U.C.C.A Lucca Center of Contemporary Art): Cristiano Tomei è una mente folle, che dà vita a una cucina irriverente, condita dalla goliardia di uno spirito vulcanico.
Nei suoi piatti si mescolano sapori e consistenze, si celano provocazioni, con forti richiami alla tradizione. Tomei si diverte a stupire i palati dei suoi avventori con abbinamenti azzardati, presentazioni teatrali, in cui tutto è perfettamente calibrato, ma inaspettato.
Una stella Michelin, l’Imbuto è stato definito dal New York Times il secondo miglior ristorante al mondo, all’interno di un museo.
